At first, this jelly seems sweet, but once it dissolves in your mouth it gives off the typical aroma of aged balsamic vinegar, with a perfect balance between sweet and sour. Perfect with cheese, especially with aged parmigiano, but also with ricotta. You can also use in more imaginative combinations such as with yogurt, gelato or grilled fish.
