Fab process : Milk is pasteurized, then skimmed. The cream is ripened with lactic starters in order to thicken. The cream is churned then kneaded until the texture is smooth and homogeneous. It is during this stage that the ingredients (fleur de sel and Espelette pepper) are incorporated.
