Origin: Mimolette, also called “boule de Lille”, is produced in the north of France. Its name comes from its consistency semi-hard.
Mimolette is often equated with a Dutch cheese but it is a French cheese. When France, under the reign of Louis XIV, was at war against the Netherlands, Colbert banned the import of Dutch cheese. He asked French farmers in the Flanders region to produce a similar cheese for moral support for the troops. Unlike its neighbor, its rind is not waxed.
Aged: 24 months at least. The refiner sound cheeses with a mallet in order to find irregularities before brushing
Taste: salted, roasted hazelnuts, sweet and salty taste.
