This vinegar is made following the traditional Spanish process of “criaderas” (drums dedicated to young wines) and “soleras” (drums dedicated to older wines)
Made by fermenting sweet wines, this vinegar is infused with intense, slightly fruity aromatic notes that it’s drawn from the oak barrels it was stored in.
This vinegar is ideal for making dressings or for drizzling over a salad. It also complements veal and duck as well as desserts like peaches and vanilla ice cream.
