The name strozzapreti translates loosely as "priest stranglers," a classic Italian pasta shape formed into elongated twists. Its gently spiralled shape is particularly well suited to hearty sauces, as the grooves and folds trap ingredients and flavour in every mouthful. Traditionally, strozzapreti pairs exceptionally well with seafood, mushrooms, rich tomato sauces, sausage ragùs, and creamy cheese-based preparations.
