Each year as we approach Australia's warmer months, Europe cools down through September, signifying the start of truffe season. Commencing with the golden-hued crowning jewel of the truffle harvest - the Italian White Truffle.
Running from the end of October and well into December, white truffle sees the season kick off with an intoxicating aroma and unforgettable flavor emanating from their cream-colored center.
Unable to be cultivated, this organic product grows in the nutrient rich soils of Italy, cradled in the roots of hardwood (oak, hazelnut and chestnut) trees.
Best enjoyed sliced paper thin across simple pasta and risotto dishes, eggs and meat. Recommending a modest white truffle shaving of 3-5 grams per serve, each truffle arriving from the soils of Italy weighing between 5 grams to 100 grams.
