Made from 100% durum wheat semolina and water, it is bronze-drawn and slowly dried, giving it a rough surface and firm texture that holds sauces exceptionally well.
Trofie are small, irregular spiral-shaped pieces of pasta, traditionally hand-rolled, which create natural grooves and curves that grip sauce rather than letting it slide off. This makes them especially suited to simple, oil-based or herb-heavy sauces where the pasta itself plays a central role.
