Whole Artichokes

The local Carciofotto of Puglia is processed by hand immediately after harvest, boiled in desulfurized vinegar and Margherita di Savoia salt through a traditional process for the preservation of artichokes.
They are preserved with sunflower seed oil, a neutral oil to guarantee the natural flavor of the artichoke and make it stable at temperatures.
