Fresh truffles are best used simply. Their aroma is most expressive when shaved over warm dishes such as pasta, risotto, eggs, potatoes, buttered toast, soft cheeses or creamy sauces.
As a general guide, allow 10–15 grams per person for a light truffle accent, or 15–20 grams per person for a more generous truffle experience.
Fresh black truffle is prized for its earthy aroma, savoury depth and ability to elevate simple dishes with butter, eggs, pasta and potatoes.
Store fresh truffles in the fridge in an airtight container lined with absorbent paper. Replace the paper regularly and use the truffle while its aroma is at its peak.
