Made from 100% Italian durum wheat semolina and pure water, the pasta is bronze-die extruded (trafila al bronzo) and slowly dried at low temperatures, giving it a rough, porous surface and excellent cooking resilience.
Paccheri rigati are large, tube-shaped pasta with deep ridges running along the exterior. The “rigati” texture increases surface grip, allowing sauces to cling firmly, while the wide hollow centre captures rich fillings and juices.
