Tajarin Truffle is a gourmet Italian egg pasta from Alfieri, made in the traditional tajarin style of the Piedmont region and enhanced with the luxurious aroma and flavour of truffle. Tajarin are long, very fine ribbons of fresh egg pasta — similar to tagliolini — prized in northern Italian cuisine for their delicate texture and rich yellow colour, which comes from a high proportion of egg yolks in the dough.
This version of tajarin is infused with truffle (often black or summer truffle) right in the pasta dough, so the distinctive earthy, aromatic notes of truffle are present even before cooking. Because the truffle is part of the pasta itself, it carries its perfume into every bite.
