Tajarin Egg is a traditional Italian egg pasta from Alfieri, rooted in the culinary heritage of the Langhe region in northern Italy.
Tajarin (sometimes spelled “tajarin all’uovo”) is a type of fresh egg pasta made from durum wheat semolina and a generous amount of fresh eggs. This gives the noodles a deep golden colour, rich flavour, and smooth, tender texture. They are long, very fine ribbon‑like strands — thinner than typical tagliatelle — characteristic of Piedmontese cuisine.
