Origin: Its origins date back to the 16th century, it was created by a community of Cistercian monks settled in Epoisses. The manufacturing secret is then passed on to the farmers of the small region, who will constantly improve the quality and typicity of their products.
Description: This creamy cheese is presented in a wooden box. Its rind is smooth or slightly winkled and shiny, ivory orange to red. The rind becomes sticky and gleaming with regular washings with brine and marc de Bourgogne. Its paste is light beige on the periphery and white at heart.
Taste: strong, dominant, and persistent.
