Ingredients
1.5 kilograms red potatoes
2 tablespoons Herbes De Provence dried herbs
4 tablespoons olive oil
2 tablespoons melted butter
3 cloves garlic (chopped)
Pinch of salt
Cracked pepper
Method
Step 1: Pre-heat the oven to 180 degrees Celsius and w ash potatoes (don’t peel), then chop to 3cm cubes.
Step 2: Par-boil the potatoes for 10 mins until al dente, not too soft. Drain spuds then arrange the potato cubes in the prepared baking dish.
Step 3: Combine the olive oil, melted butter, garlic, salt & pepper in a small bowl. Drizzle over the potatoes in the baking dish. Toss well to combine.
Step 4: Bake in oven for 30 mins, stir & bake 10 mins more.
Step 5: Add the herbs. Toss well. Continue baking for a further 10-15 mins or until vegetables are golden brown
